Who doesn’t adore jacket potatoes? And what would the humble jacket potato be without a delicious filling? This popular British meal is a much-loved comfort food. Even better, they’re so effortless to make, not to mention unbelievably tasty and versatile.

There’s so much more you can do with a baked potato than just mashing it with butter. From a tuna melt jacket potato filling to a moreish garlic mushroom topping, you won’t be short of inspiration for your next meal.

However you like your jacket potato, you’ll discover the ultimate jacket potato filling and toppings below.

First, let’s look at how to make the ultimate jacket potato. If you don’t have time to make one, cheat with Jacket Potatoes courtesy of McCain. They only take five minutes in the microwave, so all you need to do is pile in your favourite filling afterwards.

Easy Jacket Potato Recipe

INGREDIENTS

  • 1 Vivaldi, Sante or Melody baked potato
  • Olive oil
  • Salt

METHOD

  • Preheat oven to 180°C.
  • Prick the potato with a fork several times. While the potato bakes, the skin works as a cap, locking in water that enlarges the spud and steams during cooking. If it can’t drain, it may explode in your oven!
  • Smooth some olive oil and a smattering of salt over the spud. Place it directly onto the shelf of your oven. No need for foil.
  • Bake in the oven for about two hours and 20 minutes at 180°C. Alternatively, pop your spud in the microwave for 5 minutes, then finish it off in the oven for around 35 minutes.

1. Tuna Melt Jacket

Jazz up your baked potato with tuna, spring onions, chives, mayonnaise and cheese. This is the ultimate comfort food recipe.

INGREDIENTS

  • 2 baking potatoes, scrubbed
  • 1 tin of tuna in spring water, drained
  • 4 spring onions, chopped
  • ½ small bunch of chives
  • 2 tbsp mayonnaise
  • 50g cheddar, grated

METHOD

  • Follow the jacket potato recipe above.
  • Combine the tuna, onions, chives, mayonnaise and half the cheese.
  • Halve the cooked potatoes then scoop some soft potato inner into the tuna bowl, leaving a 1cm-thick shell.
  • Roughly mix the potato and tuna together, seasoning well.
  • Tip the mixture back into the shells, scatter over the remaining cheese and place in the oven until bubbling and golden. Serve with a green salad.

2. Feta, Cream and Chorizo Jackets

Add a Mediterranean twist to the traditional jacket potato by mixing the warmth of chorizo and jalapenos with a cream and feta filling.

  • 4 baked potatoes
  • 100ml soured cream 
  • 50g feta, crumbled
  • 4 slices pickled jalapenos from a jar, chopped
  • 2 tbsp coriander, chopped
  • 4 slices chorizo, cut into strips
  • 1 handful of watercress, to serve

METHOD

  • Follow the jacket potato recipe above.
  • While the potatoes are cooking, blitz the soured cream and feta in a small food processor.
  • Mix in the jalapenos and coriander. Using a frying pan, sauté the chorizo until crisp.
  • Cut the potatoes in half then divide the feta cream between them. Top with the chorizo and serve with watercress.

3. Baked Potato with Chilli

Quick and easy to make, this chilli tastes incredible with baked potato – a wonderful winter warmer.

INGREDIENTS

  • 4 baked potatoes
  • 1 tbsp olive oil
  • 1 red chilli, sliced
  • 300g lamb or beef mince
  • 300g jar of tomato-based pasta sauce
  • 1 x tin of kidney beans, drained and rinsed
  • 4 tbsp fromage frais
  • 1 handful of coriander leaves to serve

METHOD

  • Follow the jacket potato recipe above.
  • Warm the oil in a frying pan, then combine the chilli and mince.
  • Cook until the mince browns, then tip in the tomato sauce and beans. Simmer for 5 minutes.
  • Cut the baked potatoes in half then fill with the mince mixture.
  • Spoon over the fromage frais and add a few coriander leaves before serving.

4. Sweet Potatoes with Dill Yogurt and Smoked Mackerel

Switch up your regular jacket potato with sweet potato, then fill it with this delicious mix of dill yogurt and mackerel. It’s a terrific way to add some zing to a baked sweet potato.

INGREDIENTS

  • 2 small sweet potatoes small, scrubbed
  • Oil
  • 2 small fillets smoked mackerel, flaked
  • A small bunch of dill, chopped
  • 1 tsp wholegrain mustard
  • 4 tbsp fat-free yogurt
  • A pinch of paprika, plus extra to serve
  • Rocket, to serve

METHOD

  • Preheat the oven to 160°C.
  • Rub the sweet potatoes with oil and bake for 40-50 minutes until very tender and soft throughout.
  • Combine the rest of the ingredients except the extra paprika and rocket. Season well.
  • Spoon the mixture into the jackets. Scatter with a pinch of paprika. Serve with a rocket salad.

5. Mini Burger Jackets

Fan of quick and easy food? These tasty mini jacket potato burgers with delicious tomato relish are sure to satisfy.

INGREDIENTS

  • 4 medium baking potatoes, scrubbed
  • 500g minced beef
  • Salt and pepper
  • 4 tsp tomato relish
  • 4 tsp mayonnaise
  • 1 tomato, sliced thinly

METHOD

  • Follow the jacket potato recipe above.
  • While the potatoes are baking, season the minced beef and split into eight balls, then mould into flat rounds.
  • Grill for 15 minutes, turning over halfway, until fully cooked through. Spread half a teaspoon of relish over each burger and grill for an additional minute.
  • To create one burger jacket, slice the potato in half. Spread half with one teaspoon of mayonnaise, then layer with sliced tomato and two burgers. Tip the other half of the potato on top. Repeat to make four burger potato jackets.

6. Garlic Mushroom Jacket

This recipe will be a big hit if you’re a vegetarian. The garlic mushrooms are ready in under 10 minutes and they give your spuds a real punch of flavour.

INGREDIENTS

  • 1 baked potato
  • 15g butter
  • 2 cloves garlic, crushed
  • 175g mushrooms, sliced
  • 2 tbsp cream cheese
  • 2 tbsp freshly chopped herbs
  • Salt and pepper

METHOD

  • Follow the jacket potato recipe above but once the potato has been cooking for roughly an hour, melt the butter in a pan, add the garlic and mushrooms, and cook gently for 10 minutes.
  • Mix in the cream cheese and cook for a further minute. Add the herbs and season.
  • When the potatoes are ready, slice them in half length-ways and pile in the mushroom sauce.

7. Spicy Chickpea Baked Potato

Mexican meets North African tagine in this spicy chickpea topping. This recipe is vegetarian, vegan, gluten-free and dairy-free, and even contains cocoa powder!

INGREDIENTS

  • 6 baking potatoes
  • 2 tbsp olive oil
  • 2 red onions, finely chopped
  • 4 cloves garlic, grated or crushed
  • 2cm ginger, grated
  • 1 tsp chilli flakes
  • 2 tbsp cumin seeds
  • 2 tbsp turmeric
  • A splash of water
  • 2 tins of chopped tomatoes
  • 2 tbsp unsweetened cocoa powder
  • 2 tins of chickpeas or kidney beans
  • 2 yellow peppers, chopped
  • 2 tbsp parsley, plus extra for garnish
  • Salt and pepper to taste

METHOD

  • Follow the jacket potato recipe above.
  • When the potatoes are baking, cook the olive oil and red onion in a large pan for five minutes until the onions are soft.
  • Take off the lid and throw in the garlic, ginger, chilli and cumin. Continue cooking for another minute on a low heat, then tip in the turmeric and a splash of water. Cook for a further minute, being sure not to let the pan get too dry.
  • Add the tomatoes, cocoa powder, chickpeas (be sure to add the chickpea water) and yellow peppers. Bring to the boil, then simmer on a low heat for 45 minutes until the sauce is thick. The chickpea mix should be done at about the same time as the potatoes.
  • Lastly, mix in the parsley and season. Serve the mixture on top of the baked potatoes.

While jacket potatoes might be your go-to meal when you don’t have time to cook, it only takes a couple of speedy additions to transform them from humdrum comfort food to nutrient-packed power dishes.
